Day Six

I'm supposed to plan my workouts today. Freston recommends 4-6 days a week and starting where you are. Where I am at the moment isn't very far along. Due to pain and numbness I'm going to have to take it slow and easy. This is what I've decided for my schedule for this week:
Sunday- walk (which I did but really, really slowly. What would have normally taken me 15 minutes max to walk took me 30 minutes. But that's okay because I did it.)
Monday- yoga (I have an extremely gentle one with a 15 minute workout on it. That's where I'm starting.
Tuesday- off (I'm running errands and going to be tired)
Wednesday-yoga
Thursday- walk
Friday- yoga
Saturday- walk (doing the farmer's market rounds)
We'll see how it goes. I promise to keep you updated and I'll be honest, cross my heart :)
My smoothie before blending. I used the same ingredients as last time.

Post-blending and pre-drinking!

Honestly the best tomato sandwich I ever had! Toasted gluten free bread, mashed avocado on one side and vegenaise on the other. One tomato purchased from the market yesterday waiting to be sliced and sprinkled with celtic sea salt...

Ready to eat. It tasted exactly like summer, but better. I ate it with more 3 lentil and cranberry salad. I could eat that stuff by the bucketful. I had cherries and my green drink for an afternoon snack.

Here is Maddie's spaghetti sauce served over quinoa pasta. It was really amazing. Actually better than regular spaghetti I have to say. For the sauce she sauteed zuchinni, yellow pepper, mushroom, garlic and carrots. Then she added a jar of spicy roasted tomato organic sauce and 1/2 a package of Yves italian ground tofu. the quinoa noodles were great, extremely hearty. A simply delicious meal!

So far I'm feeling better in many ways. Yes, I'm still dealing with neuropathy and pain but my digestive issues have actually improved. I'm a little less tired and my skin is clearer. I think I've lost a bit of weight but I'm not sure. I'm going to weigh in tomorrow.

I still haven't quite decided what to do about the birthday thing. Do a tiny splurge or stay the course? I'll keep you posted.

  1. hi carolyn,

thank you for your comment you left on my blog and thank you for inviting me over to see what you are up to.

i've been a strict vegan for the last 2 years and would never go back to my old way of life. i'm sure you can already feel the difference in the way you feel and look. i eat very few processed foods. i try to keep my diet as fresh, local and raw as possible. i was a chef for many years so that comes in handy for my food prep. i wish you much luck and success in this project. i hope it lasts longer than 21 days!
